Whole-Ingredient Utilization & Preservation
Every menu item honors ingredients in their entirety. Through whole-ingredient cooking, fermentation, and preservation, Valle minimizes waste while enhancing flavor complexity, striving for a zero-waste kitchen.
Environmental Stewardship
Valle partners with WM’s Green Oceanside to compost organic kitchen waste, repurposing it for local farms. Used cooking oil is recycled into soap, extending its utility and reducing waste.
Eliminating Single-Use Plastics
In 2023, Valle introduced a state-of-the-art water purification and mineralization system to eliminate bottled water and significantly reduce plastic waste, lowering the restaurant’s carbon footprint.
Conscious Recycling & Repurposing
Valle actively recycles, repurposes glass, and minimizes single-use plastics. Every detail, from glassware to packaging, is carefully considered to align with its commitment to sustainability.
